Veggie Rx Denver Inner City Parish

Veggie Rx

Vegetables are some of the best sources of dietary fiber, vitamin C, potassium, and antioxidants but fewer than 10% of low income Americans are getting enough for the Center for Disease Control and Prevention Guidelines*.

*Guidelines are 2 ½ cups or 9 servings. This looks like: two medium carrots, 1 ear of corn and one large tomato.
